Seitan Fajitas Serves 6 Seitan, pronounced “say-tan,” is a high-protein, low-fat, cooked wheat gluten product that substitutes for beef. Serve the fajitas with a side of Southwestern Corn Slaw.

Cooking Time: 10 minutes
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 red bell pepper, sliced in strips
1 green bell pepper, sliced in strips
1 pound fresh seitan, thinly sliced
1 tablespoon chili powder
2 tablespoons soy sauce
1 ripe, firm avocado, peeled
1 to 2 teaspoons lemon juice
2 plum tomatoes, finely diced
Grated, reduced-fat cheddar cheese or cheddar-style soy cheese
Bottled picante salsa
Low-fat sour cream or soy yogurt
1. Wrap tortillas in foil and place in a 250° oven to heat while preparing fajita filling.
2. Heat olive oil in a heavy skillet, add onion and sauté a few minutes until soft. Add garlic and bell peppers and sauté 5 minutes more. Add seitan, chili powder and soy sauce. Reduce heat to low and simmer 5 minutes.
3. Mash the avocado with a little lemon juice in a bowl, then put the diced tomato, shredded cheese, picante sauce, and sour cream or soy yogurt into separate small serving bowls.
4. Let everyone assemble his or her own fajitas as follows: Spoon filling down the center of the tortilla and top with avocado, cheese, salsa and yogurt. Roll up and enjoy!
