Open-Face Curried Tempeh Sandwich Serves 4 Tempeh's chewy texture and nutty flavor make it a wonderful sandwich filling.

Cooking Time: 10 minutes
8 ounces tempeh, cubed
3 tablespoons soy mayonnaise
1 tablespoon prepared mustard
1/2 teaspoon curry powder
2 tablespoons mango chutney
2 scallions, diced
Chopped mixed greens
4 slices French bread
1. Place tempeh in a steamer basket and steam over boiling water 10 minutes. Let tempeh cool.
2. Mix tempeh with mayonnaise, mustard, curry powder, mango chutney and scallions.
3. Top sliced bread with greens and tempeh and serve open-face.
