Indonesian Noodles Serves 4 Soba (buckwheat noodles) and udon (whole wheat noodles) are delicious Oriental whole-grain pastas. Serve this Indonesian-inspired dish with Sweet-Glazed Tofu Cutlets.

Cooking Time: 15 minutes
2 tablespoons peanut oil or canola oil
1 large onion, quartered and sliced
3 cloves garlic, minced
1/4 teaspoon ground ginger
1/2 pound fresh mung bean sprouts
1 cup snow peas, trimmed
2 tablespoons soy sauce, or to taste
Hot red pepper flakes, to taste
Dry-roasted peanuts for garnish
1. Cook noodles as directed on package.
2. Heat the oil in a wok or large skillet. Add onion and garlic and sauté over moderate heat until onion is golden, about 5 minutes. Add remaining ingredients except the peanuts and stir-fry until the sprouts and snow peas are tender-crisp, about 5 minutes.
3. When noodles are done, drain, add them to the wok and stir-fry 3 more minutes. Remove from heat and garnish with peanuts.
