Gluten-free hunt
Was there a mistake in Alison’s Gluten-Free Baking Mix (“Gluten-Free Party Foods,” October 2008)? Does arrowroot powder actually exist? I can’t find it anywhere.

If your natural products store doesn’t sell arrowroot powder (also called arrowroot flour or starch), you can order it directly from Bob’s Red Mill (bobsredmill.com).

I was delighted to see acetyl-L-carnitine featured in your October issue (“Herbs and Supplements 101”). I take 250 mg acetyl-L-carnitine and 800 mg horse chestnut each night to combat restless leg syndrome and have no more leg jitters. What a relief!

Where’s the fructose?
Why don’t we hear more about fructose as an alternative to sugar? I hear that it has a lower glycemic index than cane sugar.

It’s true that fructose has a lower glycemic index than sucrose (cane sugar). However, numerous studies show that consuming fructose in large amounts — especially in the form of high-fructose corn syrup — prevents insulin from working effectively, which can contribute to weight gain.
