Serves 8 / Enhance this warm comfort food by topping with a spoonful of plain cream or yogurt.
4 large bananas
1/2 cup whole-wheat pastry flour
1/4 cup light brown sugar, firmly packed
1 cup rolled oats
1/2 cup macadamia nuts, finely chopped
1 tablespoon ground coriander
1/8 teaspoon sea salt
1/4 cup (1/2 stick) unsalted butter, room temperature
1. Preheat oven to 400°. Lightly coat an 8×8-inch baking dish with cooking spray. Slice bananas in half lengthwise and place cut side down in baking dish.
2. Combine all dry ingredients (flour through salt) in a bowl. Add butter and work in with fingers until mixture is crumbly. Spread over bananas, pressing down slightly. Bake until crumble gets firm but not mushy and is golden in color, 20–30 minutes. Serve very warm.
