Packed with antioxidants, protein, and soluble fiber, the tiny gray seeds supply energy, level blood sugar, and aid in digestion. A staple of Aztec and Mayan diets, this watercress relative is a source of omega-3 fatty acids, which help the body absorb vitamins A, D, E, and K. Plus, the seeds’ mucilage aids hydration by soaking up seven times their weight in water. Sprinkle the slightly nutty-tasting seeds— found in the bulk-foods aisle—over prepared entrées, grind and mix them into flour for baked goods, or stir them into fruit juice to create a thick “chia fresca.”
