Thank you for taking the time to write. The study was published in The American Journal of Clinical Nutrition (2007, Vol. 86, No. 5). While our articles are always backed by current research, we recently decided not to include full references because they tend to gum up the text. We are, however, happy to provide these details to any reader who requests them.

A photo finish
I made the Sweet Potato Pancakes with Rosemary from “Love Your Leftovers” (November 2007), but my end result looked baked and very different from the picture, which looks fried. Was the photo enhanced?

Rest assured: Every recipe is prepared exactly according to the instructions by some of the country’s top food stylists and photographers, who use lighting and garnish to make each picture sparkle. “However, everyone’s kitchen is different, so recipes might not always look exactly like they do in the photographs,” says Senior Food Editor, Elisa Bosley.
