When the days turn crisply cool and the leaves start to fall, I get the urge to bake. This is odd because I’m actually a terrible baker. I love to cook because I consider most recipes merely guidelines; I can substitute this for that, or change an amount of an ingredient based on my mood or what I have in my pantry or fridge.
But baking is a science: Proportions, measurements, cooking times and temperatures all matter. For an inspiration-based (OK, maybe sloppy) cook like me, that spells collapsed cakes, runny cookies, dense muffins. I have to follow the instructions exactly, which stresses me out a little. Even so, during the fall and through the holidays, I do it, because I absolutely love the smells and tastes of those foods in my home.
Like all cooking, what matters most is the quality of your ingredients.
