Each winter, Mindy Green of the Herb Research Foundation prepares a ginger concentrate to keep her warm when temperatures drop. First, she puts fresh gingerroot in a blender, along with the juice of one lemon, lots of honey and enough water to make it blend easily. She adds this mixture to carbonated water or brewed tea, then ladles it over rice. When refrigerated, this mixture remains fresh four to five days.
To make ginger tea, Green recommends adding up to 1 tablespoon fresh grated gingerroot to one cup of hot water and letting it steep, covered, for 5 to 10 minutes. Add lemon or honey as desired.
