Fresh fruit refreshers complement Caribbean dishes perfectly. Try topping each glass with a splash of carbonated water for a zingy and surprising homemade version of ginger ale.

1 medium pineapple
3 ounces fresh ginger
1/2 cup lime juice
1 1/2 cups sugar
8 cups water
1. Peel and core pineapple and grate fruit over a large bowl, making certain to catch all the juice. Add the lime juice and let sit.
2. Mix the sugar and water in a large saucepan and bring to a boil. Remove from heat and set aside. Wash and grate ginger and place into a large, wide-mouth earthenware crock or plastic jug. Add the pineapple mixture and the sugar-water. Cover and let sit in a cool, dark place overnight.
3. The next day, strain the mixture through a sieve and serve over ice or accented with a dash of sparkling water.
