Get coffee’s lift without its acid and bitter oils by brewing your morning fix with cold water. Coffee percolated in the Toddy Cold Brew System contains 67 percent less acid than coffee made with hot water.
Here’s how it works Steep 1 pound of ground coffee and 9 cups of cold water in the Toddy container. Remove the thick coffee concentrate 12 hours later, add hot water, and prep the beverage to your liking. The process, which also works with tea, extracts flavor and caffeine but leaves behind most of the acids and oils, which are soluble only at high temperatures. Store leftovers in the fridge—they keep for up to two weeks.
