You would think that after appearing on Oprah, The Today Show, and the cover of Time magazine, and selling upwards of 10 million books, Andrew Weil, MD, would have wanted to take a break. But instead, Dr. Weil explores a new business venture—he can now add restaurateur to his resume.
True Food Kitchen is the result of a career educating people that with a healthy diet, a major amount of persistent disorders like diabetes, heart disease, and chronic inflammation can be prevented.
“From the outset my partners and I have worked hard to ensure that True Food Kitchen would be a new kind of restaurant: one in which delicious flavors, healthy nutrients, environmental awareness and an inviting atmosphere come together to create an unforgettable dining experience,” said Weil in an interview with Organic Connections. “I think that people are attracted by the authenticity behind our message of nourishing food, environmental sustainability and good health. Of course, the delicious food speaks for itself.”
Sourcing ingredients as locally and organically as possible is one of the missions of True Food Kitchen. Some of the sustainably sourced menu items include Tuscan Kale Salad, Grass Fed Bison Burger, and Organic Tomato & Roasted Kale Pizza. All of the five True Food Kitchen locations also boast an impressive wine and beer selection. Plus, it’s relatively affordable!
Ultimately, Weil’s restaurant is a reflection of his career teaching the world how to live healthier. “My hope is that the restaurants will convince people that delicious food and food that’s good for you are not in opposition,” explains Weil.
