Rainbow spring rolls
Spring back from heavy meals with beautifully assembled, fresh rice paper spring rolls. To make them, soak rice paper in warm water for a few seconds, until soft and slightly transparent; lay flat on a plate. On one side, arrange thinly sliced fruits and veggies—cucumber, avocado, strawberry and blackberries—and greens, such as arugula, spinach or massaged kale. Rainbow bowls
Hearty enough for lunch or dinner, a rainbow bowl (sometimes called a Buddha bowl or yoga bowl) is packed with vibrant, vegetarian add-ins. First choose a grain, such as cooked quinoa or brown rice for the base. Next, arrange fresh, steamed or roasted veggies and proteins around the circumference in rainbow order (remember Roy G. Biv!), such as slivered red bell pepper, carrots, halved hard-boiled eggs, sliced cucumber and purple cabbage. Drizzle with tahini sauce, and sprinkle with hemp or flaxseeds. Rainbow fruit kabobs
Throwing a party? Make dessert a fun affair with fruit kabobs, strategically arranged like a rainbow. Working from the bottom up, skewer red grapes, blueberries, green grapes, pineapple chunks, cantaloupe and strawberry slices.
