Seitan is sold in a block, strips and shaped forms, such as chunks or crumbles. It absorbs flavors very well—even more so than tempeh or tofu—and thus requires less time to marinate, even as little as 30 minutes. Seitan can be sautéed, stewed, stir-fried and grilled.
