Lentils benefit from soaking before cooking. If time allows, soak them for an hour; then drain and rinse. For faster cooking, place lentils in a pot and cover with water. Vigorously swish them around with your hands. When water becomes murky, drain and repeat until water is clear (this could take up to four rounds).
