Purchase vacuum-sealed, organic tempeh, found at most natural product stores. If vacuum-sealed, tempeh is ready to eat but may benefit from “pre-steaming,” which helps it soak up more marinade. To steam tempeh, simply place pieces in a steamer basket over simmering water for 7–10 minutes. This recipe doesn’t require steaming, however, because the tempeh is simmered in the sauce and readily absorbs flavors.
