Jar salad formula
Makes 4 servings
3 tablespoons purchased or Homemade Dressing (see dressing recipes, below)
¾ cup raw vegetables
3 tablespoons cheese or nuts
2 tablespoons chopped pitted olives
½ cup protein (meat, poultry, beans)
½ cup roasted starchy vegetable or cooked whole grain or pasta
1½ cups lightly packed salad greens
HOMEMADE DRESSING RECIPES (each makes ¾ cup)
Herb-Garlic Lemon Vinaigrette: In a small jar combine ½ cup avocado oil or olive oil, ⅓ cup lemon juice, 2 teaspoons chopped fresh oregano, 1 teaspoon chopped fresh thyme, 1 to 2 small cloves garlic, minced, and ¼ teaspoon coarse salt. Cover and shake.
Basil-Balsamic Vinaigrette: In a small jar combine ½ cup extra-virgin olive oil, ⅓ cup balsamic vinegar, 3 tablespoons chopped fresh basil, 1 teaspoon Dijon mustard, ¼ teaspoon coarse salt and ⅛ teaspoon ground black pepper. Cover and shake.
Sweet Sriracha-Lime Vinaigrette: In a small jar combine ½ cup avocado oil or olive oil, ⅓ cup lime juice, 1 teaspoon honey, 1 to 2 teaspoons Sriracha sauce and ¼ teaspoon coarse salt. Cover and shake.
Cider-Mustard Vinaigrette: In a small jar combine ½ cup avocado oil or olive oil, ¼ cup cider vinegar, 2 teaspoons coarse ground mustard, ½ teaspoon pure maple syrup, 1 small clove garlic, minced, and 1/ 8 teaspoon coarse salt. Cover and shake.
