Sandwich shop proves sourcing local and organic is possible
Step into Organic Sandwich Company's high-ceilinged, sub-1,000 square-foot eatery in downtown Boulder, Colorado, and the first thing you’ll see is a big blackboard listing 14 producers, farmers, and organizations—all of them local, many of them organic. The board indicates the ethos of this recently opened, tiny deli, which operates by sourcing organic ingredients as close to the kitchen as possible.
