Tofu
Even carnivores can get excited about perfectly grilled tofu. Choose firm or extra-firm tofu and slice into ⅓-inch slabs, then press it between two paper towels to remove as much moisture as you can. Season your tofu however you wish or soak it in a thick marinade. You don’t need to go too crazy with either, though, because tofu readily absorbs the flavors around it.
Tofu can stick to grill grates, so make sure your grates are clean, clean, clean before you begin. Also get your grill very hot and brush the grates with olive oil. Then when it’s time to add the tofu, turn the heat down to low, close the grill lid and cook for about 20 minutes, turning the slabs 90 degrees every four or five minutes. Now your tofu should have a crispy, browned outer crust while the inside is warm and moist.
