Romaine hearts
Grilling romaine hearts gives your leafy greens a smoky flavor and serious crunch. After rinsing your lettuce, pull off any loose or wilting leaves, lop off the top one or two inches of the heads and, if the root bottoms are brown, shave those off as well (just be sure to leave on most of the roots so the bunches hold together). Next, brush each bunch with a homemade vinaigrette. Grill the lettuce on medium to high heat for about a minute, then turn and grill the other sides for a minute; repeat. Once the outer leaves have a nice char, the centers will be warm as well, so pull your hearts off the grill and chop them up into a delicious green salad.
