Flaxseed meal. I love the stuff and toss in a tablespoon or two to all kinds of gluten-free recipes, although my kids never know about it! Blueberry muffins, pancakes, waffles, homemade bread, oatmeal, smoothies ... even cookies and cake all get a dose of healthy flaxseed meal. Each tablespoon adds nearly 2 grams of plant-based Omega-3s, plus it contains amazing anti-oxidants and both soluble and insoluble fiber. All that from a mere tablespoon of yummy GF seeds that, when ground, don't noticeably change the color or taste of any foods ... so I can sneak it an anywhere! Smug and happy mommy!
