I have one picky eater and one kid who will eat literally anything, so I've seen both ends of the spectrum. One thing that worked well for everyone was to assign each kid "his" night, when he would choose the menu and pick out the ingredients for dinner that night. Whenever possible, we'd do this on a farmers' market day. It really helped both of them to get the hands-on experience of picking out fruits and veggies so they could get a sense of the color, the smell and the taste of each item before it got combined into any other dishes. Now our (formerly) picky eater is proud to host a weekly "taco night" featuring all different kinds of toppings, and has even learned to make a few different kinds of salsa.
