13 healthy and creative food trucks
Gmonkey
Mark Shadle and his wife Ami Beach Shadle (a.ka. the “The Detox Diva”) rolled out Gmonkey, the nation’s first all-vegetarian, eco-friendly food truck in 2011. The mobile kitchen is fueled by Hale Hill Farm Biofuels, a cleaner fuel alternative being used in more than 20 vehicles throughout Connecticut. Gmonkey offers local farm-fresh food, all plant-based. Among other mouth-watering fare, menu items include vegan donuts, juices, salads, soups, and vegetarian sweet potato fries.
