Mâche Salad with Pecans, Pears, and Gorgonzola
A springtime treat, mâche (pronounced mosh; also called lamb’s lettuce) grows in sweet little florets and has a buttery taste. Rich in vitamin A, vitamin C, iron, folic acid, and potassium, mâche makes a great substitute for everyday green-leaf lettuce in salads. If you can’t find mâche, you can use baby spinach instead.
