Millet
What is it? Thought to have first been cultivated in Asia, millet is a small gluten-free grain with a mild flavor.
Nutrition: U.S. farmers typically grow millet for birdseed, but it’s an important crop for humans in India, Africa, and China because of its high magnesium and antioxidant levels.
Cook: Toast 1 cup millet in a dry pan for 5 minutes; add 2¼ cups boiling water; cover, and simmer about 15 minutes; let stand 10 minutes.
