Hunn, author of the Gluten-Free on a Shoestring blog, hit upon a genius idea: Replace gluten, a protein, with another protein—in her case, whey protein isolate, which forms the basis of the simple flour blend used in her GF doughs. What really got my attention in this book were the photos … round, smooth, rising dough, shaped into baguettes, even being braided. Love the step-by-step photos and whole-meal recipes, as well.
