Today, gluten—the common name for proteins found in specific grains that are harfmul for people with celiac disease (CD) and non-celiac gluten sensitivity (NCGS)—is putting many people in a sticky health situation (sorry… couldn't help myself). It’s estimated that 1 in 133 Americans suffer from CD—the vast majority of which have yet to be diagnosed—and six to seven times more people suffer from NCGS. If you’re not part of these growing statistics, you likely know someone who is, or will soon be diagnosed.
