Serves 6-8 / Almost like fettuccine Alfredo but with fewer calories and less fuss. I use Tinkyada rice noodles.
12 ounces brown-rice spiral pasta
1 tablespoon olive oil
½ pint cherry tomatoes, or more to taste
2 large cloves garlic, finely chopped or pressed
¾ teaspoon dried basil, or 3 tablespoons chopped fresh basil
4 ounces fresh soft goat cheese (chèvre), room temperature
- Cook pasta according to package directions.
- In a sauté pan, bring olive oil to a sizzle. Add cherry tomatoes, garlic, and basil. Cook on medium heat until tomatoes begin to pop.
- Drain pasta, but don’t rinse; transfer to a warm serving bowl. Immediately add goat cheese and stir until pasta becomes coated. Add tomato mixture. Add salt and pepper to taste and serve immediately.
PER SERVING: 287 cal, 26% fat cal, 8g fat, 4g sat fat, 9mg chol, 8g protein, 46g carb, 3g fiber, 76mg sodium
