Thai Rice Spring Rolls Makes 8 wraps
Choose your favorite packaged Thai rice pilaf for this recipe. A chile pilaf gives our spring rolls a bit of a kick. Keep the rice on hand and combine it with leftover vegetables, chicken or seasoned tofu over the course of the week.
Prep Time: 25 minutes
1 package Thai chile rice pilaf
1 bottle Thai peanut sauce
2 cups haricots verts or thin green beans,
stemmed and steamed
1 cup chopped red bell pepper
1 cup shredded carrots
1/2 cup sliced scallions
2 cups cooked shredded chicken or pork or chopped Thai-baked tofu
1 package rice papers
1. Prepare pilaf according to directions on package. Refrigerate until ready to use.
2. Prepare rice paper as directed in Sesame Salad Wraps. Fill with rice, 2 tablespoons peanut sauce and remaining ingredients as desired. Wrap tightly.
