Miso and Maple Glazed Salmon with Garlic Broccolini

Instructions
- Preheat oven to 425 F . Line baking sheet with parchment paper.
- In container large enough to hold salmon fillets in single layer, whisk together miso, maple syrup, 1 Tbsp olive oil, rice vinegar, and gingerroot. Add salmon fillets, coat on each side, and let marinate for 15 minutes as oven preheats.
- Place marinated salmon on lined baking sheet and bake in preheated oven for 10 to 12 minutes, until cooked through and caramelized on top.
- In large saucepan, heat 1 Tbsp olive oil over medium heat. Add garlic and broccolini, season with salt and pepper, and sauté for 5 to 7 minutes, until tender-crisp.
- Plate salmon alongside garlic broccolini and drizzle any extra glaze overtop. Serve with a side of white rice, if desired.
