Sweet onion names indicate the growing region: Vidalia (Georgia), Walla Walla (Washington), Texas Spring, Maui, and more. Milder and thinner-skinned than fall storage onions, they keep best when cool, dry, and ventilated?not refrigerated. They’re an excellent source of the flavonoid quercetin, thought to protect against cataracts, heart disease, and some cancers.
- Sweet onions are quite nice raw. Add sliced to green salads. Include alongside vegetable crudit?s with hummus or black-bean dip.
- Finely chop and add to ground turkey with dried tarragon, salt, pepper, minced fresh parsley, and bread crumbs. Form into patties and grill.
- Thinly slice, then saut? over medium heat in a bit of olive oil and balsamic vinegar until dark brown and caramelized, about 20 minutes. Serve on toasted focaccia bread with goat cheese and fresh spinach leaves.
