Look For: Artichokes
How To Select: Tightly closed, heavier artichokes tend to be the freshest.
Tips To Prepare: For the classic steaming method, cut each stem flush with the base (you can peel and eat the stems, too) and clip off sharp leaf tips. Set in a large pot in one to two inches of water; toss lemon wedges and dried herbs in the water for extra flavor. Steam for 30 minutes or until leaves pull off easily.
Serve With: For an easy, healthy dip, mix nonfat plain yogurt with garlic powder, onion flakes, and lemon pepper.
Health Benefits: A type of thistle, the artichoke is a good source of fiber and vitamin C.
