These mini meatballs make a great appetizer. As a main dish, place several on a bun for a meatball sandwich or serve them with mashed potatoes and spinach for a well-rounded meal.
Turkey-Sage Mini Meatballs with Smoky Honey Glaze
Ingredients
MEATBALLS
- 1 egg yolk
- 1/2 teaspoon honey
- 1/2 cup finely chopped onion
- 1/3 cup flaxseed meal
- 3/4 teaspoon dried sage
- 1/2 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1–1/4 pounds ground turkey
- 1/2 cup finely chopped walnuts
- 1/4 cup flaxseed meal
GLAZE
- 1/2 cup honey
- 1/2 teaspoon smoked paprika
- 2 tablespoons cider vinegar
Instructions
- In a shallow dish combine walnuts and ¼ cup flaxseed meal. Roll meatballs, one at a time, in walnut mixture to coat. Place meatballs on a rimmed baking sheet.
- Bake meatballs for 5 minutes. Meanwhile, in a small bowl combine all the glaze ingredients. Remove meatballs from oven. Brush honey mixture evenly over meatballs. Bake 5–8 minutes more or until meatballs are no longer pink (165°).
- Transfer meatballs to a serving platter. Spoon glaze and juices from the baking pan over meatballs and serve immediately.
