Ingredients
- 4 cups whole rolled oats, divided
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- 3/4 cup coconut oil, divided
- 1 cup pitted, packed medjool dates if very dry, soak in hot water 1 minute; drain
- 3 eggs
- 1 1/2 teaspoons pure vanilla extract
- 2 tablespoons fresh orange juice
- Zest of 1 small orange
- 1 cup dried cranberries, chopped
