Summer melon salsa
Ingredients
- 3 cups honeydew melon
- 2 cups cantaloupe
- Juice of 2 limes
- 1 teaspoon ume plum vinegar or rice vinegar; add salt to taste
- 1/4 cup cilantro finely chopped
- 1 1/2 tablespoons fresh mint finely chopped
- 1/3 cup plus 2 tablespoons red onion minced
- 2 jalapeño peppers seeded and minced
- 1/2 teaspoon salt
Instructions
- Cut honeydew and cantaloupe into small dice, ½ to ¼-inch thick. Transfer to large bowl and add lime juice, vinegar, cilantro, mint, onion, and jalapeño. Add salt and toss thoroughly to combine. Will keep in refrigerator up to 1 week.
