Makes about 2 1/2 cups / This aromatic relish may be made up to four hours ahead; it’s a great platform for midsummer tomatoes and an excellent accompaniment to just about any grilled seafood, poultry, tofu, fruits, and vegetables. It even packs well for a picnic!

1 pound ripe tomatoes, finely chopped (with seeds and juices)

2/3 cup finely chopped red onion

1/4 cup chopped fresh Italian parsley

3 tablespoons extra-virgin olive oil

3 tablespoons fresh lemon juice

1 tablespoon white balsamic vinegar

3 serrano chile peppers, seeded and minced (about 2 tablespoons)

1. Combine all ingredients in a medium bowl. Season with salt and pepper. Cover and chill.
