If you'd like a more golden-brown baguette slice, simply brush with olive oil before toasting and rub with a garlic clove as the bread comes out of the oven. When tomatoes aren't in season, substitute a 14-ounce can of organic fire-roasted tomatoes, drained and patted dry.

  1. Preheat oven to 400°. Cut baguette into 1/2-inch slices; place on ungreased cookie sheet.
  2. In a medium bowl, mix remaining ingredients. Let stand 10-15 minutes, stirring occasionally, to combine flavors.
  3. Toast baguette slices in oven about 10 minutes or until golden brown, turning halfway through. Serve salsa on crostini.
