  • 1/3 cup plus 2 tablespoons red onion (minced )
  • 2 jalapeño peppers (seeded and minced )
  • 1/2 teaspoon salt

Delicious with grilled meats or seafood—or simply with chips!

  1. Cut honeydew and cantaloupe into small dice, ½ to ¼-inch thick. Transfer to large bowl and add lime juice, vinegar, cilantro, mint, onion, and jalapeño. Add salt and toss thoroughly to combine. Will keep in refrigerator up to 1 week.
