  • 1/2 cup unsweetened pumpkin
  • 1/4 cup stevia
  • 1⁄4 cup extra virgin olive oil
  • 1/2 cup whole wheat flour
  • 1 cup all puprose flour
  • 1/3 teaspoon baking powder
  • 1/3 teaspoon baking soda
  • 1/3 teaspoon ground cinnamon
  • 1/3 teaspoon ground cloves
  • 1/3 teaspoon ground nutmeg
  • 1/2 cup chopped walnuts

  1. Spray a 9 x 5-inch loaf pan with a no-cholesterol cooking spray. Dust with flour 3. Place apple butter into airtight containers and store and set aside.
  2. *If using fresh pumpkin, select a small size. Cut in quarters and discard seeds. Steam until fully cooked, approximately 15 minutes. Spoon out flesh into a bowl until cool, then mash. For a smoother texture, stir apple butter with wire or use 1/2 cup unseasoned canned pumpkin.
  3. Combine all ingredients, except walnuts, either by hand or using an electric mixer.
  4. Fold in walnuts.
  5. Pour into prepared loaf pan.
  6. Bake for 1 hour or until a toothpick inserted in the middle of loaf comes out clean.
