Warning: This might just become your new favorite lunch. Layered with veggies, salsa, spinach and Manitoba Harvest Hemp Hearts (which contain 10g protein and 10g of omegas per serving), it'll fuel you up and keep you full on-the-go. Make it vegan by omitting the chicken breast.

Manitoba Harvest
Ingredients
- 1/2 tablespoon olive oil
- 1 cup cooked chicken breast, cut into chunks
- 1 cup sliced carrots
- 1 red pepper, diced
- 1/2 large onion, roughly chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Pinch of salt
- 1 large avocado
- Juice of 1 lime
- 1 cup salsa
- 2 roma tomatoes, diced
- 1/2 of a cucumber, chopped
- 1/4 cup cilantro, chopped
- 6 tablespoons Manitoba Harvest Hemp Hearts
- Fresh spinach
- 2 large mason jars
Instructions
- Add the olive oil and carrots to a large pan and cook on medium heat for about three minutes.
- Add in the red pepper, onion, garlic and cumin and cook until everything is tender.
- Blend the avocado, lime juice and salt in a food processor until smooth. (You can also mash it in a bowl if you don’t have a food processor.)
Recipe Notes
Use half of the ingredients for each mason jar and assemble the salad in this order:
1. Salsa
2. Avocado and lime mixture
3. Roasted veggies
4. Chicken
5. Tomatoes
6. Cucumbers
7. Cilantro
8. Hemp Hearts
9. Spinach
Once you have all the ingredients layered in the jar, put the lid on it and refrigerate until ready to eat!
