Kombu-Shiitake Consommé Makes 2 3/4 Cups
This quick and savory broth is used in making our Quinoa Pilaf with Shiitake Mushroom Sauce. It's also delicious served as a soup; just add 1 tablespoon of miso (fermented soy bean paste) per cup of broth.

2 quarts water
2 3-inch pieces kombu sea vegetable
8 large dried shiitake mushrooms
1. Bring ingredients to a boil in a 4-quart saucepan. Turn heat down to simmer; cover and cook 10 minutes. Strain out kombu and shiitake and reserve for another use.
