1/4 cup heavy cream
1 tablespoon fresh lemon juice
1/2 tablespoon smooth Dijon mustard
1/2 teaspoon cane sugar
2 teaspoons chopped fresh mint
Salt and pepper, to taste
1 pound fresh kohlrabi, trimmed and grated large
2 tart apples, peeled and grated large
1. Whip cream until soft peaks form. Stir in lemon juice, mustard, sugar, and mint. Set aside to chill.
2. When ready to serve, grate kohlrabi, then apple. Mix both into cream dressing before apple turns brown. Season with salt and pepper. Serve immediately.
