  • 5 organic dried apricots, diced
  • 1 teaspoon simple syrup (to make, dissolved one part sugar in one part boiling water)
  • 1/2 ounce Creme de Peche (or any peach-flavored liqueur)
  • 2 ounces vodka
  • Dash of lemon bitters
  • Ice cubes, to fill
  • Dried apricots, for garnish

Stunningly good. Don’t throw away the muddled apricots; transfer to a bowl until the ice melts, and then drain and use in cookie dough or quick-bread batter or on top of yogurt.

  1. Muddle apricots and simple syrup in a shaker. Add Crème de Pêche, vodka, bitters, and ice. Shake and strain into a martini glass. Garnish with a dried apricot (floating in drink or on rim of glass).
