Avocado Accolades

Let's hear it for the good seed! Ounce for ounce, avocados boast the highest levels of fiber, potassium and folate of any fruit, plus a punch of vitamins B6, C and E. Add to that avocado's phytochemical profile, which includes beta-sitosterol and glutathione—believed to help prevent certain cancers and heart disease—and a healthy dose of monounsaturated fats, the kind found in olive oil and nuts. The result? A singularly excellent food that maximizes flavor and function. Bring avocados back into your diet equation with this easy recipe:

Awesome Avocado Mix

1 ripe avocado, pitted, peeled and diced
1 Roma tomato, chopped
2 green onions, chopped
1/4 cup feta or goat cheese
1-2 tablespoons chopped fresh cilantro
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic salt
1 tablespoon lime juice

Gently toss all ingredients. Let stand for 10 minutes to blend flavors. Spread on sandwiches or bagels, serve with pita chips, scoop onto mashed potatoes or fold into an omelet.
