Asian Shrimp Hobo Packets

A camping classic with a healthy update. Assemble these packets at home, transport in a cooler, place in the fire to cook, and then open them up for an all-in-one hearty meal. Be sure to use heavy-duty rather than regular foil, fold carefully to seal (don’t simply crunch it closed), and cook in hot embers, not flaming coals. You can also cook this on a home grill with the lid down. 

  1. Place four 16x16-inch pieces heavy-duty foil on a work surface. In a bowl, combine shrimp, ginger, sauce, and garlic; season with salt and pepper.
  2. Divide broccoli, onion, carrots, and mushrooms among foil pieces; drizzle each with 1 tablespoon sesame oil, a generous sprinkle of salt, and desired amount of red pepper flakes. Divide shrimp mixture among foil pieces, placing over vegetables.
  3. Bring two opposite edges together and fold over twice to create a tight seal. Pull up open edges and fold to seal, pressing foil almost flat against food (leave a little room for steam). Wrap packets in a second sheet of foil. Chill until ready to cook.
  4. Place packets in hot (not flaming) coals. Cook 8–12 minutes, rotating twice. Carefully remove packets from coals and place on plates. Let cool 5 minutes. Avoid escaping steam when opening.
