Amaranth Cardamom Porridge
  • 3 apples: Pink Lady, Fuji, Honeycrisp or apple of choice (cored and diced)
  • 1½ cups (10½ ounces) amaranth
  • ½ cup dates or raisins (chopped and pitted)
  • 1 teaspoon cinnamon
  • ½ teaspoon cardamom
  • ½ teaspoon salt
  • 1 cup water
  • 3 cups almond milk (or milk of choice)
  • 1 teaspoon vanilla
  • ¾ cup toasted pecans
  • Maple syrup

Isn't the worst thing about breakfast having to get out of bed to make it? Your slow cooker can solve that problem. Start this porridge before you go to bed — or earlier — and everything will be ready when you wake up!

  1. In the slow cooker, combine apples, amaranth, dates, cinnamon, cardamom and salt; stir well to coat apples.
  2. In a bowl, whisk water, almond milk and vanilla. Pour over apple mixture.
  3. Cover and cook on low for 6–7 hours (or overnight). Before serving, stir porridge.
  4. Serve with pecans, syrup and more milk.
