Roasted asparagus with quinoa is my favorite.
I do a Wild Rice Salad with cranberries and nuts.
Easy- cook the wild rice and cool, add chopped nuts, dried cranberries, raspberry dressing, chopped red onions and or red peppers, season with salt, and pepper and voila, you are all set.

All the salads look great but the fennel one is the first I'm going to try making at home.
