Richly colored yams and toasted coconut make this a lovely and nutritious side dish, served in individual ramekins.

1 large garnet yam (sweet potato), peeled
2 tablespoons orange juice
1 tablespoon honey or maple syrup (optional)
Salt and pepper (to taste)
1 tablespoon minced crystallized ginger
1 tablespoon unsweetened grated coconut
Recipe Instructions:
Place peeled yam in a medium saucepan with enough water to cover. Bring to boil; cook 20-30 minutes until tender. Drain and return to pan.
Preheat broiler and lightly oil two 1/2-cup ramekins. Mash yam with orange juice and honey or maple syrup. Season with salt and pepper. In a small bowl, combine ginger and coconut. Spoon yam mixture into ramekins, and sprinkle ginger mixture over top.
Broil until tops are golden, about 3-5 minutes. Watch carefully; coconut burns easily. Serve hot.
