Recipe Ingredient Details:
3 cups honeydew melon
2 cups cantaloupe
Juice of 2 limes
1 teaspoon ume plum vinegar (or rice vinegar; add salt to taste )
1/4 cup cilantro (finely chopped)
1 1/2 tablespoons fresh mint (finely chopped )
1/3 cup plus 2 tablespoons red onion (minced )
2 jalapeño peppers (seeded and minced )
1/2 teaspoon salt
Recipe Instructions:
Cut honeydew and cantaloupe into small dice, ½ to ¼-inch thick. Transfer to large bowl and add lime juice, vinegar, cilantro, mint, onion, and jalapeño. Add salt and toss thoroughly to combine. Will keep in refrigerator up to 1 week.
