Ginger gives a twist to an old favorite. Serve this recipe with brown rice and the Honey Wasabi Salmon for a complete meal.
Recipe Ingredient Details:
2 pounds baby carrots
3 tablespoons honey
2 tablespoons unsalted butter
1 tablespoon minced fresh ginger
1 tablespoon fresh lemon juice
Salt (to taste)
In a kettle, cover carrots with salted water and boil uncovered until tender, about 10 minutes.
In a skillet over medium heat, cook honey, butter, ginger and lemon juice, stirring until butter is melted.
Drain carrots and toss with honey glaze. Add salt to taste.
